A mouth-watering treat without the guilt threat: a berry gelato in a Galia melon.
Raw, Vegan, 3 ingredients. Prep time: 5 minutes! :)
If you are in Ireland at the time of my publishing this recipe – you know that we are having one of the longest-lasting dry hot summer “spells” since 1976 (I was told)!
With this intense dry heat I felt that a cooling treat was due, so I whipped up something cool and refreshing, yet sweet, tangy and juicy at the same time – here is the recipe below:
~Summer Chillin Guilt-free Gelato~
Serves 2
*Great as a cooling treat by the pool side, in the garden or as a starter at a summer dinner party (you can reduce the portion size and serve a small scoop in a galia melon “ring”).
Ingredients:

1/2 Galia melon (with seeds scooped out)

1.5 cup frozen mango

1.5 cup frozen berries

2/3 cup frozen bananas (optional, if you wish for a creamy more ice-cream like texture)
Equipment:

Processor or a Power Blender (with a tamper to push the fruit down as you are blending)
The Process:

Discard the seeds from the Galia melon and enlarge the natural groove in the middle of it if you’d like to fit more gelato into it. Set aside.

Place all the remaining ingredients into the processor and proicess until smooth and gelato-consistency-like. If using a power blender, use the Tamper to push the fruit down as you are blending.

Place the gelato into your melon and enjoy! :)
